Cut and dry every vegetable
Cut vegetables to the listed thickness, wash only before cutting, and spread on towels for 10 minutes. Spinach and cabbage must feel dry or the batter will turn watery.

Salt and release moisture
Toss all vegetables with 8 g salt and rest exactly 10 minutes. Squeeze and mix firmly for 60 seconds so onion and cabbage release enough moisture to bind the flour.

Bind with besan and spices
Add besan, rice flour, cumin, coriander, and chile. Mix 2 minutes; add cold water only 15 ml at a time until vegetables hold in loose clumps with no free batter pooling.

Fry craggy portions
Heat oil to 175°C. Drop loose 35 g clusters without compressing, six at a time, and fry 3–4 minutes, turning after the crust sets; hold oil at 165–175°C.

Check the potato strands
Split the first pakora: potato strands must be tender and steaming while the centre has no wet flour. If not, lower oil to 165°C and extend each batch 60–90 seconds.

Drain and serve immediately
Drain pakora in one layer on a rack for 3 minutes; do not cover or stack. Serve hot with green chutney while the protruding vegetable edges remain crisp.
