British recipe
Traditional Trifle
A glass-bowl British trifle layered with sherry-moistened sponge, berries set in jelly, cooked vanilla custard and softly whipped cream. The long preparation time is mostly chilling: every layer must be cold and set before the next is added so the finished cross-section stays clean.

Method

Build the sponge base
Arrange the 300 g sponge in the base of a 3 L glass trifle bowl. Sprinkle the 100 ml sherry evenly over the sponge and leave for 10 minutes so it absorbs without turning to paste.

Add the fruit
Scatter the 300 g prepared berries evenly over the sponge, pressing only lightly so the fruit stays visible against the glass and does not crush into the cake.

Pour and set the jelly
Pour the 500 ml cooled unset jelly mixture slowly over the fruit. Refrigerate the bowl for at least 3 hours until the jelly is completely firm before any custard is added.

Heat the milk and vanilla
Heat the 600 ml milk with the 5 ml vanilla over medium heat for about 5 minutes until steaming and just below a boil. Remove from the heat.

Whisk the custard base
Whisk the 120 g egg yolks with the 100 g caster sugar and 40 g cornflour until smooth and pale. The cornflour should be fully dispersed with no dry pockets.

Cook the custard
Whisk about one third of the hot milk into the yolks, then return everything to the saucepan. Cook over medium-low heat for 5–7 minutes, whisking constantly, until thick and the custard reaches about 85°C. Remove from the heat immediately.

Cool the custard fully
Scrape the hot custard into a shallow bowl and press baking paper or food-safe wrap directly on the surface. Cool for 30 minutes, then refrigerate until completely cold before layering.

Add the custard layer
Spoon the completely cold custard over the firm jelly and spread gently to the edge without breaking the jelly surface. Refrigerate for 1 hour so the custard layer settles.

Whip and add the cream
Whip the cold 400 ml cream with the 30 g icing sugar for about 3–4 minutes until soft peaks hold. Spoon it over the custard in loose swirls rather than pressing it flat.

Finish and chill the assembled trifle
Scatter the optional 40 g toasted almonds over the cream. Refrigerate the assembled trifle for at least 2 hours before serving so all layers are thoroughly cold and stable.
