Beef Wellington

A centre-cut beef fillet wrapped in dry mushroom duxelles, prosciutto and puff pastry. The important work happens before baking: hard searing, evaporating the mushroom moisture, chilling each wrap, and using a thermometer so the pastry becomes deeply golden before the beef passes its target doneness.

Method

  1. 01

    Sear and cool the beef

Season the beef with 6 g salt and 2 g pepper. Heat the 15 ml oil in a heavy pan over high heat and sear the fillet for 8–10 minutes total, turning until every surface is dark brown. Transfer to a rack and cool for 15 minutes.

  2. 02

    Cook the mushroom duxelles dry

Melt the 30 g butter over medium-high heat. Add the 80 g shallots for 3 minutes, then the 10 g garlic, mushrooms, thyme, remaining 4 g salt and 2 g pepper. Cook 12–15 minutes, stirring, until the mixture is dark, concentrated and no free moisture remains. Spread on a tray and cool completely.

    Brush with mustard and chill

Brush the cooled beef all over with the 30 g Dijon mustard. Refrigerate uncovered for 20 minutes so the surface is cold and dry before wrapping.

    Wrap in prosciutto and duxelles

Overlap the 120 g prosciutto into a rectangle on baking paper. Spread the cold duxelles evenly over it, place the beef in the centre and roll tightly into a cylinder. Twist the paper ends to compress the shape and refrigerate for 30 minutes.

  5. 05

    Encase in puff pastry

Roll the chilled 500 g pastry on the 20 g flour to about 3 mm thick, large enough to wrap the beef. Remove the paper from the beef, place it seam-side up on the pastry, wrap tightly, trim excess and seal the seam with a little beaten egg. Place seam-side down and chill 30 minutes.

  6. 06

    Glaze and score the pastry

Heat the oven to 200°C. Brush the Wellington evenly with the remaining beaten egg and score shallow diagonal lines only through the surface of the pastry, without cutting into the filling.

  7. 07

    Bake to temperature

Bake at 200°C for 35–40 minutes, rotating once if the oven browns unevenly. For a medium-rare centre, remove when a thermometer inserted through one end into the beef reads about 52–54°C and the pastry is deeply golden.

    Rest before slicing

Rest the Wellington uncovered for 15 minutes before slicing with a sharp serrated knife. The rest lets the beef finish gently and helps the pastry stay crisp rather than steaming under foil.
