Season the meat simply
Pat goat dry, trim only excess surface fat, and rub all over with coarse salt and black pepper. Leave uncovered in the refrigerator while the grill is prepared so the surface dries.

Build a two-zone charcoal fire
Arrange glowing coals on one side of the grill and leave the other side clear for indirect heat. Wait until the coals are covered with grey ash and the fiercest flames have passed.

Slow-grill the thick pieces
Place the goat over indirect heat, close the lid and cook, turning every 15 minutes. Keep a drip pan beneath if needed and avoid flare-ups from dripping fat.

Char over direct heat and check doneness
Move pieces over the coals and turn until evenly browned and lightly charred. Check the thickest piece reaches at least 71°C; if not, return it to indirect heat and continue cooking.

Rest and make kachumbari
Transfer meat to a board and rest for 10 minutes. Meanwhile toss tomato, red onion, chile, cilantro, lime juice and a pinch of salt; drain excess liquid before serving.
