Bavarian Krustenbraten

A Bavarian pork shoulder roast built around crisp crackling and dark-beer gravy. Slow roasting renders the shoulder while repeated basting keeps the pan aromatic, then a short blast of high heat turns the scored rind brittle and deeply golden.

Method

  1. 01

    Dry and score the rind

Pat the pork skin completely dry. Score the rind in a 15 mm diamond pattern, cutting through skin and fat but not into the meat. Rub the roast with all 20 g salt, 5 g pepper, caraway and paprika.

    Build the roasting bed

Heat the oven to 140°C. Spread the onions, carrots, celeriac and leek in a roasting pan, then place the pork on top with the skin facing up and fully above the vegetables.

    Start the slow roast

Pour 250 ml of the dark beer and all 350 ml stock around the vegetables without wetting the rind. Roast at 140°C for 3 hours.

Baste the pan, not the skin

Continue roasting for 90 minutes. Add the remaining 250 ml beer to the pan in 2 additions as the liquid reduces, keeping every pour below the rind.

  5. 05

    Crisp the crackling

Raise the oven to 230°C. Roast for 10–15 minutes, watching closely, until the scored rind blisters and becomes deeply golden and brittle. Rotate the pan if one side colours faster.

    Rest and strain

Move the roast to a board and rest for 20 minutes. Meanwhile strain the pan liquid into a saucepan, pressing the roasted vegetables lightly, and skim excess surface fat.

Reduce the beer gravy and carve

Simmer the strained pan liquid for 8–12 minutes until glossy and concentrated. Carve the pork across the grain into 12–15 mm slices, keeping a strip of crackling on each portion, and serve with the gravy beside it.
