Welsh Rarebit
A savoury Welsh cheese topping enriched with ale, mustard and Worcestershire sauce, spread thickly over toast and grilled until blistered. It is more than plain cheese on toast: the cooked cheese sauce should be cohesive, sharp and malty rather than oily.

Toast the bread first
Heat the grill or broiler. Toast the 8 bread slices for 2–3 minutes per side until firm and light golden. Set them on a rack so the undersides stay dry while the cheese sauce is made.

Cook the roux
Melt the 30 g butter over medium-low heat. Stir in the 30 g flour and cook for 2 minutes, stirring constantly, until smooth and pale biscuit-coloured without dark browning.

Whisk in the ale and seasonings
Gradually whisk in the 180 ml ale and cook for 3–4 minutes until thick enough to coat a spoon. Whisk in the 15 g mustard, 15 ml Worcestershire sauce and 1 g cayenne.

Melt in the cheese gently
Lower the heat and add the 400 g grated cheese in 3 additions, stirring until each is almost melted before adding the next. Remove from the heat when smooth and thick; taste before using any of the 2 g salt.

Spread and grill until blistered
Spread the hot cheese mixture thickly over all 8 toasts, right to the edges. Grill for 2–4 minutes, watching continuously, until the topping bubbles and develops deep golden-brown spots. Serve at once with a few drops of extra Worcestershire sauce if desired.
