    Cook the tomato sauce

Pour off most frying oil, leaving a thin film. Soften half the garlic, add coriander, cumin and chili, then stir in crushed tomatoes and simmer until thick. Finish with some vinegar and salt.

    Make the garlic-vinegar sauce

Mix the remaining garlic with the remaining vinegar and a pinch of salt. Let it stand while the grains cook so the sharp garlic mellows.

    Par-cook the lentils

Place lentils in a saucepan, cover generously with water and bring to a boil. Reduce heat and cook until just tender but still holding shape; drain.

    Steam the rice with lentils

Heat olive oil in a pot, add rinsed rice and stir to coat. Fold in lentils, salt and enough hot water to cover by a little; cover and cook on low until tender and the liquid is absorbed.

    Cook the pasta separately

Boil pasta in salted water until al dente. Drain and toss with a little oil so the small pieces do not clump.

    Warm the chickpeas

Rinse and drain the chickpeas, then warm them in a small saucepan with a spoonful of water until hot. Keep them whole for layering.
