Method

Dry and slice the cheese
Drain halloumi from its brine and pat every side dry. Cut into even 1.5 cm slices so they brown at the same rate; keep chilled until the pan is ready.

Dust lightly with flour
Mix flour with black pepper on a plate. Coat each cheese slice lightly, then tap off excess; a thin film helps form a crisp crust without a pasty coating.

Heat the pan
Heat olive oil in a heavy skillet over medium-high until shimmering but not smoking. Lay one test slice in the pan; it should sizzle gently without the oil spitting.

Fry until deeply golden
Arrange slices in one layer without crowding. Fry 2–3 minutes per side, turning only when the first face releases easily and is deep golden; work in batches if needed.

Finish with lemon and serve
Transfer to a warm plate. Squeeze lemon over the hot cheese, scatter oregano if using and serve at once while the crust is crisp and the centre springy.
