Salt and dry the eggplant
Toss eggplant cubes with salt and leave briefly, then pat them dry. Drying helps them brown in the pan instead of releasing too much water.

Brown the eggplant in batches
Heat olive oil in a wide skillet and brown eggplant in uncrowded batches, turning until golden on several sides. Transfer to a plate.

Cook celery and onion

Build the tomato agrodolce
Add tomatoes and cook until they collapse into a chunky sauce. Stir in vinegar, sugar and black pepper, then simmer until the sharp vinegar aroma softens.

Combine olives, capers and eggplant
Fold in green olives, capers, raisins and browned eggplant. Simmer gently so the vegetables absorb the sweet-sour sauce while retaining their shape.

Cool and finish with basil
Remove from heat and cool to room temperature. Tear in basil, taste the agrodolce balance, then serve with toasted bread or as a side.
