Method

  1. 01

    Salt the fish briefly

Pat fish dry and toss with 4 g salt and lime juice. Refrigerate 15 minutes only, then drain any released liquid; longer acid contact can make the surface mushy.

    Soak the souring ingredients

Soak tamarind and kokum separately in 120 ml warm water each for 15 minutes. Squeeze and strain tamarind; keep kokum petals in their liquid.

    Cook the curry base

Heat oil over medium and cook onion 6–8 minutes until translucent. Add coconut masala and remaining water, bring to a gentle simmer, and cook 8 minutes, stirring so coconut does not catch.

    Poach the fish gently

Add kokum with soaking liquid and remaining salt. Slide fish into one layer and hold at 85–90°C for 5–7 minutes without stirring until the thickest piece reaches 63°C and flakes.

    Rest before serving

Turn off heat, cover, and rest 8 minutes so fish absorbs the sauce without breaking. Lift pieces with a slotted spoon, ladle curry around them, and serve with steamed rice.
