Method

  1. 01

    Check and oil the eggplants

Choose eggplants that feel light for their size. Pierce each six times, inspect the holes for spoilage, then rub with 15 ml oil; keep a tray ready to catch juices.

  2. 02

    Flame-roast until collapsed

Set eggplants over a medium gas flame or under a high broiler. Turn every 2–3 minutes for 18–25 minutes until skin is blackened all over and a skewer passes through the centre without resistance.

    Steam, peel, and drain

Put hot eggplants in a covered bowl for 8 minutes. Split, scoop out flesh, discard charred skin and any dense seed pockets, then drain the pulp in a sieve for 5 minutes.

    Mash but keep texture

Chop or mash the drained flesh until no pieces exceed 2 cm, leaving soft strands visible. Do not blend it smooth; the rustic texture carries the smoky flavour.

    Cook onion and aromatics

Heat 30 ml oil over medium. Cook onion 7–9 minutes until translucent with pale-gold edges, then add garlic, ginger, and green chile for 60–90 seconds.

    Reduce the tomato masala

Add tomato, chile powder, and 5 g salt. Cook 8–10 minutes, stirring, until tomato is pulpy and almost dry and oil glistens around the edge.

    Sauté the eggplant and finish

Fold in eggplant and remaining salt. Sauté medium-low 6–8 minutes until hot and cohesive but not pasty. Turn off heat, add optional garam masala, cilantro, and lemon juice, then rest 3 minutes.
