Method

  1. 01

    Cook the chickpeas

Place soaked chickpeas, onion, garlic and water in a pot. Bring to a boil, skim foam, then cover and simmer gently until the beans are creamy inside, about 30 minutes; timing varies with age.

    Season the broth

Stir in cumin and 3 g salt. Simmer 5 minutes so the spice blooms, then taste the broth; add the remaining salt only if needed.

    Prepare bread and bowls

Divide torn bread among four warm bowls. Ladle a little hot broth over it and let stand 2 minutes so the bread softens while keeping a few chewy edges.

    Add chickpeas and optional egg

Spoon chickpeas and enough broth over the bread. If adding eggs, poach them separately in gently simmering water until the whites are set; use pasteurized eggs if serving soft yolks.

Finish with lemon, harissa and oil

Add lemon juice to taste and drizzle each bowl with olive oil. Serve harissa at the table so each person can adjust the heat; eat while the bread is hot and fragrant.
