German recipe
Kartoffelpuffer
Crisp German potato pancakes made from freshly grated potato and onion, squeezed dry and fried in a shallow layer of fat. The contrast matters: lacy brown edges outside, tender potato inside, with applesauce as a classic sweet-tart accompaniment.

Grate the potato and onion
Coarsely grate the potatoes and onion into a large bowl. Work promptly so the potato has less time to oxidize and darken.

Squeeze very dry
Wrap the grated mixture in a clean towel and squeeze firmly until very little liquid comes out. Let the collected potato liquid stand for 5 minutes, then pour off the water and keep the white starch settled at the bottom.

Mix the batter
Return the dry potato mixture to a bowl. Add the reserved potato starch, eggs, flour, salt and nutmeg and mix just until evenly combined.

Heat a shallow layer of oil
Pour enough oil into a wide heavy skillet to form a 5 mm layer and heat over medium-high heat. A small strand of potato should sizzle immediately without scorching.

Fry until lacy and crisp
Spoon the mixture into the hot oil in 3 batches, making 12 pancakes in total. Flatten each to about 8 mm thick and fry for 3–4 minutes per side until the edges are crisp and the centres are deep golden.

Drain and serve immediately
Drain the pancakes in a single layer on a rack for 2 minutes. Serve 3 per person while crisp, with cool applesauce alongside rather than spooned over the surface.
