    Coat and marinate

Pat the chicken dry and coat every surface with the paste, working some under loose skin. Cover and refrigerate for at least 4 hours so the seasoning reaches the meat.

    Prepare the grill

Set up a two-zone grill with medium-high direct heat and a cooler indirect side. Oil the grate lightly and let the chicken lose its refrigerator chill while the fire settles.

Grill the chicken skin-side down over direct heat until browned, then turn and colour the other side. Move pieces away from flare-ups so the sugar and spices do not burn.

    Finish over indirect heat

Move the chicken to the cooler side, cover the grill and cook until the thickest piece reaches 74°C. Turn once during this stage and keep the lid closed between checks.
