Method

Season and marinate the chicken
Pat chicken dry. Rub with lemon juice and 3 g salt, cover and refrigerate while preparing the onion base; discard any leftover raw marinade.

Slow-cook the onions
Place onions in a dry heavy pot over medium-low. Stir frequently until they release moisture and become very soft and reduced; lower heat if they begin to brown sharply.

Fry berbere and aromatics
Add niter kibbeh, ginger and garlic; cook briefly until fragrant. Stir in berbere and tomato paste and cook until the spice darkens slightly and smells rounded, without scorching.

Simmer chicken until tender
Add stock and remaining 5 g salt, then nestle chicken into the sauce. Cover partly and simmer gently until the chicken is tender and its thickest part reaches 74°C, about 45 minutes.

Hard-cook the eggs
Meanwhile, cover eggs with cold water in a saucepan. Bring to a boil, turn off the heat, cover and stand until the yolks are firm. Cool, peel and score each egg lightly so it can take on the sauce.

Finish eggs in the sauce
Add peeled eggs to the stew for the final 10 minutes, turning them gently once. Rest off heat for 10 minutes so the sauce settles, then serve with injera.
