Method

  1. 01

    Make a light caramel

Heat 25 g sugar with 20 ml water in a small pan over medium for 5–7 minutes until amber. Remove from heat and carefully add the remaining 30 ml of the caramel water; it will bubble. Swirl and cool 10 minutes before mixing with pork.

  2. 02

    Season and chill the pork

Combine pork, cooled caramel, 30 ml fish sauce, oyster sauce, shallots, 15 g garlic, lemongrass and pepper. Mix just until sticky and evenly seasoned, about 1 minute. Cover and refrigerate at 4°C or below for 1 hour; prepare pickles during this wait.

    Quick-pickle papaya and carrot

Toss papaya and carrot with salt for 10 minutes, then rinse and drain well. Dissolve 15 g sugar in 100 ml water and vinegar. Add vegetables and refrigerate at least 30 minutes until crisp and lightly sour; drain before serving.

    Mix the dipping broth

Warm the remaining 350 ml water and dissolve the remaining 40 g sugar. Cool until lukewarm, then stir in 50 ml fish sauce, lime juice, remaining 10 g garlic and optional chile. The sauce should be light enough to dip noodles, not as salty as straight fish sauce.

    Prepare noodles and greens

Boil vermicelli according to its package, usually 5–7 minutes, until no hard centre remains. Rinse with cool potable water and drain for 5 minutes. Arrange noodles, washed dry lettuce and herbs on separate serving plates.

    Shape even patties

Divide the chilled pork evenly into 16 portions. Shape into patties about 6 cm wide and 2 cm thick. Keep them cool while a lightly oiled grill pan heats over medium-high for 3 minutes.

    Grill until charred and cooked

Grill patties in two uncrowded batches over medium to medium-high, 4–5 minutes per side. Turn only when the underside releases easily. Check the thickest centre reaches 71°C; if the surface darkens early, reduce heat and continue until safe inside.

    Warm the optional fried rolls

If serving cooked chả giò, re-crisp four rolls on a rack in a 190°C oven for 8–12 minutes, until crisp and the centre reaches 74°C. Follow the producer's longer time if required. This step uses fully cooked rolls, not raw frozen rolls.

Serve pork in the dipping bowls

Divide patties and drained pickles among four small deep bowls and add the light dipping broth. Serve warm pork with noodles, lettuce and herbs alongside, plus one optional fried roll per person. Dip a little noodle and herb into the sauce with each bite.
