Prepare uniform vegetable pieces
Prepare the onion and peppers as 1 cm dice and the courgette as 1.5 cm dice. Toss the courgette with 2 g salt and leave in a colander for 10 minutes, then blot the surface dry so it browns instead of steaming.

Cook the onion and peppers first
Heat 40 ml olive oil in a wide 30 cm sauté pan over medium heat. Add onion with 2 g salt and cook 6 minutes, then add both peppers and cook another 8 minutes until softened and lightly golden at the edges.

Brown the courgette separately in the pan
Push the onion-pepper mixture to the outer edge and add the remaining 20 ml olive oil to the centre. Add the dry courgette and cook 7–8 minutes, turning occasionally, until some faces are golden and the pieces are just beginning to soften.

Reduce the tomatoes around the vegetables
Mix all the vegetables together, add the 800 g chopped tomatoes and 2 g salt, and bring to a gentle simmer. Cook uncovered for 20–25 minutes, stirring every few minutes, until the tomato is thick and glossy and little free liquid remains.

Taste and finish the pisto
Taste the reduced vegetables. Add the final 2 g salt only if needed and add the 5 g sugar only if the tomato still tastes sharply acidic. Simmer another 5 minutes, then remove from the heat; the pisto should mound softly on a spoon.

Cook the eggs and serve
In a non-stick skillet, cook the 6 eggs over medium-low heat for 4–6 minutes until the whites are completely set while the yolks remain soft. Divide the warm pisto among four plates and top with the eggs; serve immediately.
