American recipe
Classic Cheeseburger
A griddle-style American cheeseburger built around deeply browned beef, a soft toasted bun, melting cheese and cold crisp toppings. The method keeps the beef loose until it hits the hot pan so the crust develops without making the centre dense.

Prepare the cold toppings
Slice the onion and tomato, separate the lettuce and pickles, and keep all toppings chilled while the griddle heats.

Portion the beef loosely
Divide the beef into 4 loose portions without kneading or compressing. Season the outside evenly with the salt and pepper just before cooking.

Toast the buns
Heat a heavy griddle over medium-high. Butter the cut faces of the buns and toast cut-side down for 1–2 minutes until evenly golden, then set aside.

Sear the first side
Increase the griddle to high heat. Set the beef portions down with space between them and press each once into a patty about 15 mm thick. Leave untouched for 2–3 minutes until a dark crust forms.

Flip and melt the cheese
Scrape firmly under each patty, flip once, and immediately add a cheese slice. Cook another 2–3 minutes until the cheese slumps over the beef and the centre is safely cooked.

Sauce the toasted buns
Spread ketchup and mustard across the toasted bun interiors while the patties rest briefly off the heat.

Assemble and serve immediately
Put lettuce on each bottom bun, add the hot cheeseburger patty, then tomato, pickles and onion. Close with the top bun and serve while the cheese is still molten and the crust is hot.
