Salt the pickle vegetables
Combine carrot and daikon with 3 g salt and 10 g sugar. Toss and rest 10 minutes until a strip bends without snapping. Rinse briefly, drain, and press dry in a clean towel so the brine will not be diluted.

Make a quick pickle
Dissolve remaining 40 g sugar in 120 ml warm water, then mix in vinegar and cool. Submerge the vegetables in a clean jar and refrigerate for 45 minutes. This is a fresh refrigerator pickle, not a shelf-stable preserve.

Slice and dry the fillings
Cut sausage and ham into 2–3 mm slices. Wash and dry cilantro; slice cucumber and chile. Drain 250–300 g pickles in a sieve for 5 minutes. Keep meats, pâté, and mayonnaise refrigerated until the bread is ready.

Refresh and split the baguettes
Warm whole baguettes in a 170°C oven for 4–5 minutes until the crust is crisp but the centre remains soft. Cool 1 minute, slit lengthwise without cutting the back hinge, and remove only excess dense crumb if needed.

Spread and layer the meat
Spread each roll with 15 g mayonnaise and 30 g pâté. Layer 60 g Vietnamese steamed pork sausage and 40 g ham along the length, then add cucumber. Keep the filling inside the bread edges so every bite contains both meat and vegetables.

Finish with pickles and herbs
Divide drained pickles, cilantro, and chile among the rolls. Drizzle a quarter of the soy sauce into each, close gently, and serve immediately. If transporting, pack wet pickles separately and add them just before eating.
