Cook and cool the rice
Cook rice in the stock with 2 g salt over medium-low heat, stirring often, until tender and all liquid is absorbed, about 18 minutes. Off heat mix in Parmigiano and one beaten egg. Spread on a tray and cool completely for at least 45 minutes.

Prepare the filling
Mix the thick ragù with peas and cool it. Keep the 16 mozzarella cubes separate so every rice ball receives one central cheese piece.

Shape 16 rice balls
Divide rice into 16 equal portions. Flatten one portion in the palm, add about 15 g ragù-pea filling and one mozzarella cube, then close rice around it and compact into a 6–7 cm ball.

Bread the arancini
Beat the remaining egg with 30 ml water. Roll each ball in flour, then egg, then breadcrumbs, pressing the crumbs on evenly. Chill 15 minutes while the oil heats.

Fry until deep golden
Heat oil to 175°C. Fry 4 arancini at a time for 4–5 minutes until deep golden and the centre is hot. Drain on a rack, season with the remaining salt and rest 5 minutes before eating.
